There is only 1/2 teaspoon salt for 8 cups of liquid (along with low sodium broth) and a little from the carrots (which you could leave out). The amount of sodium you’re seeing in the nutrition calculator is for 6 servings, that is only 187 grams sodium per serving.  You can completely leave out the salt, I hope you do try the soup.
