It manages to be basic and comforting without being boring or plain. You can sit down in front of the TV with a warm of bowl of it on a cold night, or you can just as easily serve it to guests as an elegant side accompanying a simply prepared protein like chicken or fish.

If you have guests who don’t eat pork, I suggest replacing the pancetta with 1 Tbsp. of butter.

It’s also great topped with additional parmesan cheese because, well, what isn’t?
