First time I made an Irish stew it was bitter because I used the wrong version of Guinness. Reading more recipes I found one that called for a handful of prunes of all things!  It said they would dissolve in the stew, which they did and counter the bitterness. I have done that ever since – instead of sugar. I like the sound of your recipe, though, and the extra information you give. Thanks.
