This could be due to a few reasons. Not kneading the dough enough to develop the gluten properly, the dough didn’t rise enough, or the yeast may not have activated properly.

You can change the currants to raisins, no problem. If the cherries are fresh, I don’t recommend them as they will add moisture, but dried cherries would be perfect. Enjoy!
